Vaishali Restaurant opened in 1965 on Fergusson College Road. For sixty years it has served one thing above all others: an extraordinarily good masala dosa. And in doing so, it has become the closest thing Pune has to a secular, democratic institution β the one place where you'll find a retired professor sitting three inches from an IT intern, both waiting for the same crispy, golden crepe.
Vaishali does not need a marketing strategy. Every morning, a queue forms outside. It snakes along the pavement. Regulars know the system: order from the menu while waiting, arrive at the table seated and hungry. The dosa comes crackling and golden, potato masala fragrant with mustard seeds and curry leaves, two chutneys and sambhar alongside.
The filter coffee β served in the traditional South Indian davara-tumbler double cup β is as close to perfect as can be achieved.
What makes Vaishali unusual among Pune's eateries is its partially open-air seating β a covered terrace area that lets in the morning breeze. This, combined with the FC Road setting and the permanent hum of student conversation, creates an atmosphere that is uniquely Pune. Nowhere else feels quite like this.
Vaishali is proof that when something is truly excellent, no amount of time, no number of competitors, and no change in fashion makes the slightest difference.
